Bisphenol A, also known as BPA, according to the National Institutes of Health may affect the development of young and unborn children. The U.S. Food and Drug Administration, which since the 1960s has said BPA is safe, must reassess by March 31 whether the chemical should be forbidden in food and beverage packaging. An immediate ban would hurt the $60 billion can industry, cutting profits at major can makers. What is a hurried mother to do? Open a questionable soup can or fast food packed in a plastic bag, or serve a sandwich?
I haven’t thought of canned soup for a lifetime. Here is a quick, easy curry in a hurry. Add sliced vegetables –carrots, celery, onions, potato, and others you like– in a pot. Add some water and bring it to a boil, simmer for a couple of minutes. Let it steam with the lid on. In a bowl mash some goat cheese or other soft cheese, add Indian spices – cumin, turmeric, mace, a salt substitute. Add some of cooking water and mix this creamy blend back on top of the vegetables to make a fast curry soup. If you have a sweet tooth, instead mix milk and shredded coconut to the steamed vegetables.
